Pineapple Padjeri Perak

This is an unusual recipe great for winter to accompany fried chicken with tomato rice. It originates in Malaysia and has Indonesian and Indian influences. Sweet pineapple is given a savoury treatment with the use of beef curry powder and coconut milk flavoured with cinnamon, ginger and cloves.

Ingredients

I whole pineapple - remove skin, pips and cut into half and the 1cm slices
4 cloves garlic sliced thinly
2cm ginger sliced thinly
2cm cinnamon stick
4 cloves
1 whole star aniseed
3 tblsp curry powder (your preferred strength)
1/2 tin thick coconut milk
1 tin thin coconut milk
2 tsp chilli powder
1 cup water
2 tsp sugar
1 tsp salt

Method

  1. Cut pineapple in half and the 1com slices. Boil quickly and strain. Set aside.
  2. Fry sliced garlic, shallots, ginger, cinnamon stick, cloves and star aniseed in a little olive oil until fragrant
  3. Lower heat and add the pineapple slices
  4. Add curry powder and 1 cup water and 2 cups thin coconut milk
  5. Simmer slowly for 15 minutes
  6. Add thick coconut milk, chilli powder, salt and sugar to taste

    Allow to simmer until a thick rich texture is obtained.

Serve

Place in serving bowl and garnish with sprig of coriander
